This recipe is one of my favorite recipes. It's quick and it tastes so good that I always make the portion for 2 days. My family keeps asking about it. The nice thing about this recipe: It is also suitable for a low carb or keto diet if you prepare it with low carb tortillas. If you're one of the lucky ones who don't have to watch your figure, you can of course use normal tortillas instead of low-carb tortillas. They're a bit cheaper too. Ingredients for 8 pieces:

8 tortillas (low carb or regular)

For the filling:
800g chicken breast
2 cans (about 800 g) kidney beans
2 red peppers
half a tube of tomato paste
150 ml vegetable broth
1 teaspoon of salt
half a teaspoon of turmeric
1 tablespoon hot paprika powder
2 laurel leaves
2 cloves of garlic
200 g Mozzarella spread cheese

Optional:
cilantro


For the filling after baking:
lettuce leaves
tomato slices
cucumber slices
and onions

Serve with creme fraiche or guacamole, or with both. ;)
